Italian Influence in the Heart of Texas

Family owned and operated, the Texas Hill Country Olive Oil Company can be found at 2530 West Fitzhugh Road and has blossomed since opening in 2008 into an impressive olive oil and associated product production site where visitors can come to enjoy tastings and tours. Headed up by the Gambini Family, the idea for the Texas Hill Country Olive Oil Company came about from a deep-seated desire to do something meaningful with their Italian heritage. 3rd and 4th generation immigrants from Italy, the family decided to pursue the purchase of 17 acres of land in Dripping Springs and by 2009, the olive trees were in the ground and growing. Dripping Springs proves to be the ideal destination for olive production thanks to the weather, rocky limestone soil, and slope of the land which provides proper water runoff and is reminiscent of the landscape found in those areas of Italy where olive oil production thrives. Today, the Texas Hill Country Olive Oil Company is proud to be a certified organic orchard with several awards for quality to their name.
